Fried corn

We fry everything in the south! Ok, maybe not everything but I have personally eaten fried pickles, fried candy bars and fried Twinkies (I know you’re thinking eww but they’re really good!).

What you’ll need:

1 can whole kernel corn, drained
1 can cream style corn
½ c cornmeal
½ c flour
1 egg white
2 Tbl milk
Salt & pepper
Oil to fry in

In a medium bowl, stir together corns. Line a cookie sheet with foil and spray with non stick cooking spray. Drop spoonfuls of the corn onto the sheet and freeze until firm (usually about 2 ½ hours). In a separate bowl mix together remaining ingredients. Dip frozen nuggets into the batter and cook in hot oil until golden brown. Usually around 2 minutes. Don’t overcook or the corn will cook right out the middle. Drain on a paper towel lined plate. Makes about 20 corn nuggets.

whole kernel corn – $0.40/can
cream style corn – $0.44
cornmeal – $3.12/5 pound bag
flour – $2.12/5 pound bag
milk – $3.99/gallon
eggs – $1.09/ dozen
Total – $1.84
