Easy cheesy casserole

This is one of my favorite lunches.

What you’ll need:

1 (8 oz) bag egg noodles
3 c broccoli florets (frozen is perfect)
2 jars sharp processed cheese spread or 2 c cubed Velveeta
¾ c milk
½ c crushed cheese flavored crackers
Pepper to taste

Cook noodles according to package directions, adding the broccoli 2 minutes before they are finished. Drain the noodle/broccoli mix. Using the same pan mix together cheese, milk and pepper until it is smooth (if you are using Velveeta like I do then heat over low heat stirring constantly until cheese is melted). Stir noodle/broccoli mix into cheese mixture. Spoon into a greased casserole dish. Sprinkle the cracker crumbs on top of casserole. Bake @ 375 degrees for 25 – 30 minutes or until it’s bubbly and golden brown.

frozen broccoli – $1.89
Velveeta – $3.59
milk – $3.99/gallon
cheese crackers – $1.59
Total – $9.26
