The Eat Food NOT Money Cookbook

Beef lo mein

Very easy and completely quiets my Chinese food cravings.

What you’ll need:

¾ lb boneless beef steak
2 tsp soy sauce
2 tsp dry sherry
1 tsp cornstarch
2 pkg chicken flavored ramen noodles
4 c boiling water
3 c broccoli flowerets
1 ½ Tbl peanut oil for frying
3 Tbl oyster sauce
2 tsp cornstarch dissolved in 2 tsp water

Slice beef into thin slices about 2 inch long. Place in a blow and stir in soy sauce, sherry and dry cornstarch. Break ramen noodle blocks into 6 pieces each. Place in a separate bowl, sprinkle with included seasoning packets and cover with boiling water. Stir and let soak. Steam broccoli either in the microwave about two minutes or in a steamer until it’s barely tender. Heat oil in a large wok or skillet. Add beef mixture and stir fry until it’s no longer pink. Stir in broccoli. Pour 2/3 c of broth from the soaking noodles into a measuring cup. Add the oyster sauce to the measuring cup and stir to mix. Drain the noodles and discard the remaining broth. Add the broth/oyster mixture to the skillet with the meat and bring to a simmer. Stir in the cornstarch mixture and cook until thickened. Add the noodles and stir and cook until evenly coated and heated through. Serves 4.
