Caribbean marinated kabobs

You can make these with chicken, pork, firm fish like tuna or snapper, or seafood like shrimp and scallops. You can also change up the vegetables to whatever kind you like.

What you’ll need:

2 lbs meat, cut into 1 ½ inch pieces or 1 lb large shrimp
½ pineapple, peeled, cored and cut into 1 ½ inch pieces or 1 can pineapple chunks, drained and rinsed
1 red onion, peeled and cut into 4 wedges, layers separated
2 red, yellow or green bell peppers, or a mixture of all 3, cut into 1 ½ inch pieces
1 pkg cherry tomatoes
¼ c orange juice
¼ c olive oil
¼ c cilantro, chopped
½ tsp cayenne pepper
8 bamboo skewers

Combine all ingredients in a large, zipper close bag. Seal and turn over several time to blend the ingredients. Marinate in refrigerator for 30 minutes. Thread the skewers, alternating meat and vegetables. Place on a rack in a pan and bake @ 375 degrees or cook on an indoor or outdoor grill. Cook 8 – 10 minutes on each side or until the meat is cooked through. Makes 8 kabobs.
