The Eat Food NOT Money Cookbook

Bring on the fudge topping

I’ve said it before, food that’s made at home just tastes better than restaurant or store bought in my opinion. This is an excellent fudge sauce that can be used to top anything you like chocolate on.

What you’ll need:

1 (12 oz) can evaporated milk
1 bag (2 c) semisweet chocolate chips
½ c sugar
1 Tbl butter
1 tsp vanilla

In a heavy saucepan, heat milk, chips and sugar to boiling over medium heat, stirring constantly. Remove from heat. Stir in butter and vanilla until sauce is smooth and creamy. Cool about 30 minutes or until sauce thickens. It can be kept refrigerated up to 4 weeks in an airtight container. Makes about 3 cups.

Cost:
evaporated milk – $1.50
chocolate chips – $2.50
sugar – $1.99/4 lb bag
butter – $1.75/pound
vanilla – $2.25
Total – $4.60

Butterscotch nut fudge

What you’ll need:

1 ¾ c sugar
1 (7 oz) jar marshmallow crème
¾ c evaporated milk
¼ c butter
1 ¾ c butterscotch chips

Line 8 inch pan with foil, extending the foil over the edges of the pan. Combine sugar, marshmallow crème, evaporated milk and butter in a heavy saucepan. Cook over medium heat, stirring constantly until mixture comes to a full boil. Boil and stir for 5 minutes. Remove from heat. Gradually add butterscotch chips, stirring until chips are melted. Stir in nuts and vanilla. Pour into pan. Cool. Refrigerate 2 – 3 hours. Remove from pan and place on cutting board. Peel off foil. Cut into squares. Store in a covered container in refrigerator.
