Pork and rice skillet supper

I like this best with orange but the apricot is very good too.

What you’ll need:

4 boneless pork chops, 3/4-inch thick each
3 cups chicken stock
3/4 cup apricot preserves OR orange marmalade
1 tbsp. Dijon-style mustard
2 cups uncooked INSTANT white rice

Cook the pork in a 12-inch nonstick skillet over medium-high heat until it’s well browned on both sides. Remove from pan. Stir the stock, preserves and mustard in the skillet and heat to a boil. Reduce the heat to low. Stir in the rice. Return the pork to the skillet. Cover and cook for 10 minutes or until the pork is cooked through and the rice is tender. Serves 4.

Fruit filled shortcake

Strawberries aren’t the only fruit that tastes good with shortcake!

What you’ll need:

2 c biscuit mix
1/3 c quick cooking oats
3 Tbl brown sugar
½ c milk
3 Tbl butter, melted
2 pears, peeled and cut into 1 inch pieces
1 c cranberries (frozen is fine)
½ c orange juice
¼ tsp cinnamon
1 can apricot pie filling

Preheat oven to 425 degrees. In a large bowl, mix first 5 ingredients until a soft dough forms. Drop dough onto an ungreased cookie sheet into six ‘piles’. Sprinkle with additional brown sugar & oats if desired. Bake 8 – 10 minutes or until golden brown. In a heavy saucepan, heat remaining ingredients except pie filling until the fruit mixture boils. Reduce heat and simmer uncovered 3 – 4 minutes, stirring occasionally, just until the cranberries pop. Stir in pie filling. Split warm shortcakes and fill and top with fruit mixture. Top with whipped topping if desired. Makes 6 servings.
