Dirty rice

This is a traditional Cajun dish.

What you’ll need:

4 slices bacon, diced
¼ lb ground pork
1 small onion, chopped
1 stalk celery, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 garlic clove, minced

Add the onion, celery, bell peppers, and garlic to the pan. Sauté over low heat for 5 minutes. Stir in seasonings, stirring well, and cook for an additional 3 minutes. Stir in the rice and cook for 5 minutes. Add the broth and the bacon/pork mixture. Bring to a boil. Reduce heat, cover and simmer for 10 minutes. Stir in the chicken livers and cook, covered, for 5 minutes. Serve immediately, garnished with chives. Makes 6 servings.
