Easy chicken stir-fry

This is so yummy you’ll want to eat it all yourself!

What you’ll need:

¼ c orange juice
1 ½ Tbl cornstarch
1 lb skinless, boneless chicken breasts, cut into strips
¾ c chicken broth
1 ½ Tbl soy sauce
2 ½ tsp vegetable oil
1 clove garlic, minced
1 Tbl minced fresh ginger OR 1 ½ tsp ground ginger
1 ½ c snow peas OR green beans
1 medium red bell pepper, cut into thin strips (about 1 c)
¾ c sliced green onion
1 c frozen broccoli, thawed
1 medium carrot, thinly sliced
2 c cooked white rice

Combine the orange juice and cornstarch in a shallow glass bowl. Add the chicken strips and stir to coat them well with the marinade. Cover and chill for 2 hours. Drain and discard remaining juice. In a small bowl, mix together the broth and soy sauce. Set aside. In a wok or skillet, heat the oil over medium heat. Add the garlic and ginger and cook and stir for 30 seconds. Add the chicken and cook and stir for 3 minutes. Add the vegetables and cook and stir an additional 5 minutes. Stir in broth/soy sauce and heat through. Remove from heat. Place about ¼ cup of rice on separate plates. Top with chicken mixture and serve hot. Feeds 4 – 5.

French Quarter Green Beans

Another New Orleans favorite.

What you’ll need:

3 ½ cups French style green beans
3 Tbl butter
1 can cream of mushroom soup
3 oz cream cheese, softened
1 tsp dried onion flakes
1 (8 ounce) can sliced water chestnuts, drained
¼ tsp garlic salt
¼ tsp ground black pepper
1 ½ cups shredded cheddar cheese
1 (2 ½ oz) package slivered almonds
Paprika

Cook green beans according to package directions, drain and set aside. Melt butter in a heavy saucepan over low heat. Add soup and cream cheese. Cook over low heat, stirring constantly, until cream cheese is melted and mixture is smooth. Remove from heat and stir in remaining ingredients except for almonds and paprika. Spoon mixture into a lightly greased 1 ¾ qt. casserole. Top with almonds and sprinkle with paprika. Bake uncovered @ 375 degrees for 45 minutes. Serves 4.

Easy three bean salad

A nice picnic or potluck dinner cold dish.

What you’ll need:

1 can garbanzo beans (chickpeas), drained and rinsed
1 can kidney beans, drained and rinsed
1 can green beans, drained and rinsed
4 green onions, chopped
1 stalk celery, sliced

For dressing:

½ c apple cider vinegar
¼ c vegetable oil
1 Tbl honey
½ tsp ground dry mustard
¼ tsp garlic powder
¼ tsp pepper
¼ tsp onion powder
¼ tsp cayenne pepper

Whisk together dressing ingredients until well combined. In a separate bowl, gently combine salad ingredients. Pour dressing over salad and toss gently to coat. cover and refrigerate at least 2 hours. Gently toss before serving. Makes 8 servings.

Japanese shrimp & noodles


Bet you never thought to use ramen noodles in your main course! This is an easy and very tasty recipe!

What you’ll need:

1 package ramen noodles
1 Tbl oil
1 lb shrimp, peeled and deveined
2 cloves of garlic, finely chopped
1 Tbl ginger
1 ½ c baby carrots, cut lengthwise in half
1 c green beans, cut in half
1 ¾ c chicken broth
2 Tbl soy sauce
1 tsp sugar
1 Tbl lemon juice
1 tsp cornstarch

Cook noodles according to package directions. Drain. Heat oil over medium high heat in a skillet. Rotate skillet to coat the entire bottom. Add shrimp, garlic and ginger and cook about 3 minutes, stirring often, until shrimp are pink. Remove from skillet. Put carrots, green beans, 1 c of the broth, soy sauce and sugar in the skillet. Heat to boiling. Cover and cook over medium heat 4 – 6 minutes, stirring occasionally, until the vegetables are tender. Add shrimp back to pan and stir in lemon juice. Mix cornstarch and remaining broth until smooth. Stir into shrimp mixture. Heat to boiling, stirring constantly. Boil and stir for 1 minutes. Serve over noodles. Serves 4.

Green bean casserole

I thought since I was posting all my holiday recipes I better not forget the green bean casserole. I can’t remember a holiday dinner without it growing up.

What you’ll need:

2 cans cream of mushroom soup
1 c milk
2 tsp soy sauce
¼ tsp pepper
4 cans green beans, drained
1 can French fried onions

Stir soup, milk, soy sauce, pepper and beans plus 1 1/3 c of the French fried onions together in a casserole dish. Bake at 350 degrees for 25 minutes or until hot all the way through. Stir. Top with remaining onions. Bake for an additional 5 minutes.

Variations: Add ½ c toasted sliced almonds to the topping. Add 4 slices of cooked crumbled bacon to the green bean mixture.
