Chocolate mint sauce

This is a super simple sauce that is excellent over ice cream

What you’ll need:

  • 10 York Peppermint Patties (the candy)
  • 3 – 5 Tbl cream (depending on how thick you want it)

Melt the candies in the top of a double boiler stirring occasionally. Blend in cream when candies are completely melted. Use immediately. Makes enough to cover 6 servings of ice cream (or 4 if you heap it on like I do!)

Decadent strawberry daiquiris

What you’ll need:

½ oz strawberry schnapps
1 oz light rum
1 oz lime juice
1 tsp powdered sugar
1 – 2 large strawberries
Ice

Remove vegetation from strawberries, wash and cut into quarters. Put strawberries and alcohols, lime and sugar into a blender and blend in short bursts 3 or 4 times. Add ice almost to the top of the blender and blend on high until all ingredients are combined. For a creamier daiquiri, add 2 scoops of strawberry or vanilla ice cream before the addition of the ice. Garnish as desired. Makes about 5 drinks.

Pear crisp

What you’ll need:

4 -5 ripe pears
2 Tbl lemon juice
¾ c dried cherries, blueberries or raisins
6 Tbl butter, softened
2/3 c flour
2/3 c oats
2/3 c brown sugar
½ c chopped pecans or walnuts
1 tsp cinnamon
½ tsp allspice
Vanilla ice cream or whipped topping (optional)

Preheat oven to 375 degrees. Halve and core the pears. Slice into ½ inch slices. Toss with lemon juice. Combine pears and dried fruit in a 13 x 9 inch pan. Mix butter and flour with a fork until it’s crumbly. Mix in oats, brown sugar, nuts and spices. Sprinkle evenly over fruit and press down lightly. Bake for 20 – 25 minutes or until pears are tender (check with the tip of a knife or a fork). Serve warm with ice cream or whipped topping. Makes 6 – 8 servings.

Spicy apple topping

This is great over ice cream, pancakes, French toast or to fill crepes!

What you’ll need:

3 Tbl butter
4 apples, sliced and peeled
1 Tbl lemon juice
1 tsp lemon zest
Dash of nutmeg
Dash of ginger
Dash of coriander
1-3 c sugar

Melt butter in a saucepan over low heat. Add apples, lemon juice, lemon zest and spices. Cook for 5 minutes. Stir in sugar and cook until apples are tender, stirring occasionally. Cool slightly before serving.

Chocolate almond coffee

Very rich and very good.

What you’ll need:

½ c whipping cream
2 tsp powdered sugar
1/8 tsp almond extract
Chocolate ice cream
Strong hot coffee

Beat whipping cream, sugar and extract on high until stiff peaks form. Place a scoop of ice cream in each mug and pour coffee over it. Top with the flavored whipped cream. Serve immediately. Makes 4 cups.
